Recipe Notes
If you are using sweetened chocolate for your chocolate ice cream, then you can omit (or decrease the quantity of) icing sugar.
Check thickness of your ice cream mixture before putting it in freezer. If you use lot of milk and other liquids in ice cream, then the water present in those ingredients must freezes and becomes ice. You can use cream and condensed milk to make your ice cream mixture thick.
Always use air-tight lid to close your container. Don’t forget a simple principle that air is present everywhere, so in your freezer also. Water present in this air gets condense and gradually collects in your ice cream mixture in loosely closed container (or in open container) and freezes. In this case, you will find lot of ice-crystals in your ice cream.
Always select the right size of your ice cream container so that it will get filled completely. Remember, the container half filled with your ice cream mixture is actually not half empty, but it is half-filled with air which contains lot of water. This water gradually separates from air when your container cools in freezer and mixes in your ice cream mixture. Later on it turns into ice.
