Cashew is the principal ingredient of this recipe. So we grind cashew nuts in a grinder to start this recipe.
Now, make sugar syrup in a non-stick pan with sugar and half a cup of water. Stir it continuously.
Add cashew nuts and ghee in sugar syrup when the sugar syrup reached at one-thread consistency.
Cook it on medium flame by stirring it continuously.
When the mixture starts to leave the surface of the pan, remove it from the flame and let it cool.
Dissolve saffron in 1 tsp milk or water.
When kaju roll mixture reached at moderate temperature then make medium sized rolls from it. Decorate your kaju rolls with saffron and pistachio chips.
Delicious kaju rolls are ready to serve for the celebrations in family.
