  1. First of all wash and soak rice and lentils.
  2. Heat ghee in a karahi. Now add ginger garlic paste and all vegetables in it.
  3. Add salt, turmeric powder, garam masala in vegetables and mix the vegetables properly.
  4. Cook these vegetables on medium flame for 5 minutes, so, the vegetables will cook partially.
  5. Now add soaked rice and lentils in it and add 300 ml water in it. Mix it properly and cover the lid. Let it cook on medium flame for 10 minutes.
  6. Rice and lentiles will absorb all the water in 10 minutes and your nutritious mix veg khichdi will prepare.
  7. You can also add chopped cashew nuts, almonds, raisins in this khichdi recipe to increase the nutritional value of the khichdi and to enhance the taste.
  8. Serve it hot or at room temperature. Curd can also be served with this mix veg khichdi.
