if raw mango is not available, then 2 tsp dried mango powder or amchur powder can be used

Stuffed Karela Recipe : Step by Step Instructions
  1. Scrape bitter melons and reserve scrapings in a bowl.
  2. Now, slit the bitter melons without cutting through and remove the seeds.
  3. Take water in a pan, add 1 tsp salt in it and boil bitter melons in this water until slightly tender.
  4. Now drain the water and let the boiled bitter melons cool.
  5. Squeeze these bitter melons gently.
  6. Meanwhile, we will prepare stuffing mixture to stuff in bitter melons.
  7. Heat 2 tsp oil in a pan and cook onions in it till light brown.
  8. Then add scrapings of bitter melon, tomatoes and raw mango and cook for 5 minutes on low flame with covered lid.
  9. Now open the lid and add all the spices. Again cook this mixture for 2 minutes on low flame.
  10. When stuffing mixture cooked well then switch off the flame and let the mixture cool.
  11. Now, stuff the boiled bitter melons with this cooked mixture and tie them with a thread to secure the stuffing inside the bitter melons.
  12. Reserve the remaining stuffing mixture for final serving.
  13. Heat oil in a fry pan and shallow fry stuffed bitter melons on low flame until light brown.
  14. Wonderful stuffed karela is ready to serve.
  15. You can serve these bitter melons hot or at room temperature. Untie threads at the time of serving and serve this wonderful vegetable with the remaining stuffing mixture.
