Grilled cheese sandwich (ग्रिल्ड पनीर सैंडविच) is a basic sandwich prepared with all varieties of cheese placed between the slices of bread of all kinds. Grilled cheese sandwich is referred to as toasted cheese, cheese toastie and simply grilled cheese in various regions of the world.
Grilled cheese sandwich is served hot with soup in some countries, whereas it is served as snacks with tea in some other countries. It is also served as a whole meal in the United States and some other countries.
As the grilled cheese sandwich is popular across the world, it has many variations according to the cultural difference and the availability of the ingredients.
I’m preparing grilled cheese sandwich with Indian flavors using Indian cottage cheese called Paneer and Holy Basil leaves called Tulsi.

- 1 cup Onion (finely chopped)
- 1/2 cup Tomato (finely chopped)
- 1/2 cup Coriander Leaves (fresh and finely chopped)
- 1/2 cup Mint Leaves (fresh and finely chopped)
- 1/2 cup Holy Basil Leaves (Tulsi, fresh and finely chopped)
- 200 gm Paneer (Indian Cottage Cheese)
- As per taste Salt
- As per taste Black Pepper Powder
- 1 dozen Bread Slices (white bread or brown bread)
- 100 gm Butter
- 50 ml Tomato Ketchup
- 50 ml Garlic Paste
- 2 tsp Red Chili Flakes

- Prepare Fillling for Sandwich:
- Take 1 cup of finely chopped onion in a bowl.
- Add 1/2 cup of finely chopped tomato in it.
- Add 1/2 cup of finely chopped fresh coriander leaves.
- Add 1/2 cup of finely chopped fresh mint leaves.
- Add 1/2 cup of finely chopped Holy Basil leaves.
- Add grated Indian cottage cheese "Paneer".
- Mix it well.
- Now, add salt as per taste.
- Add black pepper powder as per taste.
- Once again, mix it well.
- Your delicious, colorful sandwich filling is ready.
- Apply a thin layer of soft butter on the bread slice.
- Then, apply 1 layer of tomato ketchup over it.
- Finally, apply 1 layer of garlic paste.
- Prepare one more bread slice in the same way. Don't prepare all the 1 dozen slices at once. The bread slices will become soggy.
- Sprinkle some red chili flakes over your bread slices.
- Now, put filling over one bread slice in good amount.
- Turn another slice over it, which you prepared with all the spreads, i.e. soft butter, tomato ketchup and garlic paste.
- Press the upper bread slice gently with your palm.
- You can grill it in any of the griller whichever you have in your home. It may be a microwave oven with grilling facility, electric griller, gas stove griller or charcoal griller.
- I will use charcoal grilling, because I love smoky flavors of it. Grilling instructions are same of all kind of grillers.
- Grease the top surface and bottom surface of your sandwich with a thin layer of butter before putting it into griller. It will keep your sandwich soft for long time.
- Put your sandwich in griller.
- Grill it properly from both the side.
- Your grilled cheese sandwich is ready. Cut it diagonally and serve hot.
- You can use either white bread or brown bread for this grilled cheese sandwich recipe as per your choice.
- Keep butter out from your refrigerator before half an hour, when you are going to use it. It will become soft.
- If you are preparing the grilled cheese sandwich for your kids, you can skip red chili flakes.
- If you want to avoid lot of fats, and don't want to grease it with butter at the time of grilling, then wrap your sandwich hot in aluminium foil. It will keep your sandwich soft for longer.
