Vermicelli kheer recipe (सेंवई खीर रेसिपी) is a traditional sumptuous dessert recipe which has special significance on Eid. Raksha bandhan, Holi, Diwali and other festivals in many countries.
Vermicelli kheer is made by rice vermicelli (sevai), milk and sugar. It is flavored with saffron, cardamom, almonds, pistachio and raisins.
Basically vermicelli kheer is a kind of pudding. It is served in both ways, i.e. hot and chilled during the meals and as a dessert.
Rice vermicelli also known as sevai is roasted until pink and then boiled with milk and sugar. Some dry fruits and nuts are added for richness and flavors. It is a very easy and quick veg recipe but very delicious and in fact sumptuous festival recipe.

- 500 ml Milk
- 50 gm Vermicelli (broken in 1 inch size)
- 50 gm Sugar
- 1 tsp Ghee or clarified butter
- 20 gm Raisins
- 20 gm Almonds (finely chopped)
- 20 gm Pistachio Chips
- 1 tsp Green cardamon powder
- 10 threads Saffron
- First of all, heat 1 tsp ghee in a karahi and roast vermicelli in it until pink.
- Now boil milk in a pan. When milk starts boiling then add sugar, raisins and saffron in it.
- When sugar dissolve completely in milk then add roasted vermicelli in it and let it cook on medium flame until it becomes thick. Stir it occasionally.
- Now, add all the remaining ingredients in it and mix it well.
- Delicious vermicelli kheer is ready. You can serve it hot or chilled during the main course or as a dessert.
