Hi friends! Thank you all for appreciating my Anjeer Roll Recipe. Now today, I have come up with delicate cashew roll or Kaju roll recipe (काजू रोल रेसिपी) which would be a sweet addition in your dessert recipes menu.
This kaju roll recipe is prepared by grinding the cashew nuts. Cashew powder is then prepared in sugar syrup to make delicious rolls. Traditionally Kaju rolls are embellished with saffron and pistachio chips.
The best part of Kaju roll recipe is that it needs very minimal ingredients to prepare. Only thing you need to follow the described cooking method like how should be the texture of cashew powder, the right consistency of the sugar syrup and the cashew dough. Because if the sugar syrup is highly viscous, your kaju rolls will come out hard and if the sugar syrup is thin in consistency, you can’t give this elongated shape to your kaju rolls.
It is favorite to all age groups because of its softness, mouth melting, sweet and insane deliciousness. Kaju roll is always a good way to enjoy the cashew goodness in every bite along with the nutritions of cashews.
These fancy looking expensive Kaju Rolls are very easy to make at home and a perfect yummy dessert which can pep up any festival. Apart from the festivals or special occasions, it is one of the very good fasting recipes. It can be enjoyed with dry fruits namkeen, sabudana khichdi, sabudana roti, masala aloo etc on fasting days.
It has a good shelf life so you can keep it in your refrigerator for atleast 7 days and enjoy as a cashew week.

- 200 gm Cashew Nuts
- 100 gm Sugar
- 10 threads Saffron
- 2 tsp Pistachio Chips
- 2 tbsp Ghee
- Cashew is the principal ingredient of this recipe. So we grind cashew nuts in a grinder to start this recipe.
- Now, make sugar syrup in a non-stick pan with sugar and half a cup of water. Stir it continuously.
- Add cashew nuts and ghee in sugar syrup when the sugar syrup reached at one-thread consistency.
- Cook it on medium flame by stirring it continuously.
- When the mixture starts to leave the surface of the pan, remove it from the flame and let it cool.
- Dissolve saffron in 1 tsp milk or water.
- When kaju roll mixture reached at moderate temperature then make medium sized rolls from it. Decorate your kaju rolls with saffron and pistachio chips.
- Delicious kaju rolls are ready to serve for the celebrations in family.
