Kanji Vada (कांजी वड़ा) is a Rajasthani drink which is prepared in two parts. 1st is Kanji – a Rajasthani beverage which is very good for digestive system. 2nd is Vada – prepared from lentils.
During festival seasons, you generally eat lot of fried food and sweets which can disturb your digestive system. Kanji is a very good beverage for your digestive system, so it is specially prepared in Rajasthani families during festival seasons, i.e. Holi, Diwali, Sheetala Ashtami etc.

Ingredients
Ingredients Required to Prepare Kanji
- 1 litre Water
- 2 tsp Black Mustard Seeds (coarsly ground)
- 1/2 tsp Salt
- 1/2 tsp Black Salt
- 1/2 tsp Red chili powder
- 1/2 tsp Vegetable Oil
- 1 pinch Asafoetida

- 100 gm Chawli Dal
- 1/2 tsp Fennel Seeds
- To Taste Salt
- 250 ml Vegetable Oil (to deep fry Vada)

Instructions to Prepare Kanji
- Boil water and let it cool till room temperature.
- Add all the spices in this water and mix properly.
- Keep your Kanji at dry and hot place for 2 days. It will turn sour in 2 days which is the delicious traditional taste of Kanji.
- Mix properly at the time of every serving so that all the spices get mixed. You can serve it in glass or in soup bowl.
- Enjoy your Kanji as a beverage.
Instructions to Prepare Vada
- Soak Chawli Dal overnight in fresh water. If you are using Moong Dal, soak for 4 hours.
- Drain it in morning and grind it in grinder to make thick paste. Don't grind too much. Let the very small granules remain in it.
- Add fennel seeds and salt in it and mix properly.
- Heat oil in a Kadahi.
- Shape a Vada on your fingers and drop it in hot oil to fry.
- Deep fry Vada at medium flame till golden brown.
- At the time of serving, immerse your Vada in Luke warm water for 5 minutes and then drain. By doing so, Vada will become soft. Now put 1 or 2 Vada in a soup bowl and pour Kanji in the bowl.
- Enjoy delicious traditional Kanji Vada.
Recipe Notes
- If you use Matki (earthen pot) as a container for your Kanji, you will get amazing taste.
- You can easily consume Kanji for 7 days.
- You can consume Kanji as a beverage without Vada.
- Generally it is not recommended to consume Kanji more than 1 glass in a day, because it contains black salt, Asafoetida and black mustard seeds which work as diahhrial substances, if over consumed.
