Mix veg khichdi recipe (मिक्स वेज खिचड़ी रेसिपी) is a delicious and nutritious recipe because lentils and fresh vegetables used in it. This mix veg khichdi recipe is a very good recipe for children because they love its taste and it has high nutritional value.
Mix veg khichdi is prepared by rice (basmati rice is best), mung dal, masoor dal (split red lentils), chana dal (chickpea lentil), and fresh vegetables with few indian spices.
It is very easy and quick recipe so that you can prepare it instantaly and can serve it in breakfast, as snacks or as main dish in lunch or dinner. It is so delicious that your struggle to give nutritious food with good taste to your children will end here.
- 100 gm Rice
- 25 gm Moong Dal (without skin)
- 25 gm Masoor Dal (split red lentils)
- 25 gm Chana Dal (chickpea lentil)
- 2 tbsp Ginger Garlic paste
- 25 gm Potato (diced)
- 1 Onion (thinly sliced)
- 25 gm Cauliflower (roughly chopped)
- 25 gm French beans (roughly chopped)
- 25 gm Carrot (diced)
- 25 gm Fresh green peas
- 2 Tomatoes (diced)
- As per taste Salt
- 1/4 tsp Turmeric Powder
- 1 tbsp Cumin Seeds
- 1 tsp Asafoetida
- 1 tsp Garam Masala
- 50 gm Ghee
- First of all wash and soak rice and lentils.
- Heat ghee in a karahi. Now add ginger garlic paste and all vegetables in it.
- Add salt, turmeric powder, garam masala in vegetables and mix the vegetables properly.
- Cook these vegetables on medium flame for 5 minutes, so, the vegetables will cook partially.
- Now add soaked rice and lentils in it and add 300 ml water in it. Mix it properly and cover the lid. Let it cook on medium flame for 10 minutes.
- Rice and lentiles will absorb all the water in 10 minutes and your nutritious mix veg khichdi will prepare.
- You can also add chopped cashew nuts, almonds, raisins in this khichdi recipe to increase the nutritional value of the khichdi and to enhance the taste.
- Serve it hot or at room temperature. Curd can also be served with this mix veg khichdi.
- You can add or remove the vegetables of your choice in this khichdi recipe.
- You can use cooking oil instead of Ghee.
