Papdi chaat (also spelled as Papri Chaat) is one of the most eaten snack food in India. Here papdi refers to the deep fried wafers made of refined flour. Generally papdi is made in triangular shape by rolling the kneaded refine flour.
In traditional papdi chaat (पपड़ी चाट), papdi is served with boiled potato, yogurt, powdered Indian spices (or chaat masala), coriander chutney and Imli chutney.
Now a days, some other variations of papdi chaat are also popular. Boiled chick peas or boiled sprouted beans or small bhalle (fried lentil balls used in Dahi Bhalle or Dahi Vada) are also added (or replaced) with boiled potato in these variations. Zero sev is also added in papdi chaat as topping.
This chaat is also eaten as starter in India. It is perhaps one of the most eaten street food across India.
Today, I am sharing the authentic mouth watering papdi chaat recipe with video in this post.
- 250 gm Refined flour (maida)
- 1 tsp Salt
- 1/2 tsp Carom Seeds
- 100 ml Oil
- Water (to knead refined flour)
- 4 Potatoes (boiled)
- 500 gm Curd (yogurt)
- As per taste Coriander chutney
- As per taste Tamarind chutney
- As per taste Salt
- As per taste Red chili powder
- As per taste Cumin Seeds Powder
- 2 tsp Fine sev
- First of all, put refine flour in a bowl. Then add all ingredients required to make papdi in it and knead it to make a dough.
- Cover it with a muslin cloth and leave it for 10 minutes.
- Make balls from the dough and roll.
- Fold it twice in halves to give a triangular shape and roll it slightly.
- Heat oil in a karahi and deep fry all papdis on medium flame until papdis get golden brown.
- Let the papdis cool and come at room temperature.
- Break 4 papdis in small pieces and add all the ingredients of chaat in it as per taste.
- It is not necessary to make papdi at the time of serving papdi chaat. You can make papdi in advance. If you store papdi at cool and dry place, then you can use papdi for 1 month.
- You can also add boiled sweet corn in papdi chaat.
