Potato salad recipe (आलू की सलाद की रेसिपी) is one of the most liked salad recipes across the world. It is prepared in many varieties. People love potato salad with cream, with curd, with fruits, with mix veg and with many more ingredients.
I am sharing a very delicate potato salad recipe made by boiled potato, yogurt, egg and some veggies.

Ingredients
- 6 Potatos (medium size)
- 1 Egg
- 1 Green Onion
- 1/2 Red Onion (lengthwise thinly sliced)
- 1 Cucumber
- 3 tbsp Yogurt
- 2 tbsp Prepared Mustard
- 2 tbsp Fresh Lemon Juice
- 2 tbsp olive oil
- 50 gm Fresh mint leaves (coarsly chopped)
- to taste Salt
- to taste Black Pepper Powder
- few Fresh Coriander Leaves (for garnishing)

Potato Salad Recipe - Step by Step Instructions :
- Wash potatoes properly because we will use potato with skin. Boil these potatoes.
- Also boil an egg.
- Meanwhile, complete all the preparations to make salad.
- Put red onion in a big bowl.
- Peel a cucumber. Cut it lengthwise in half and remove the seeds. Then, chop the deseeded half cucumber and add it in bowl.
- Now, remove the bulb and green leafy part of the spring onion. Then, chop the stem and put it also in the bowl.
- Cut the boiled potatoes with skin in 8 pices and add in bowl.
- Roughly chop the boiled egg and add in bowl.
- Finally add yogurt, prepared mustard, fresh lemon juice, olive oil, mint leaves, salt and black pepper powder and mix the salad thoroughly.
- A very delicious, healthy and delicate potato salad is ready. Keep it in fridge for a while.
- Serve it chilled and garnish your potato salad with coriander leaves.
