Kadhi recipe is one of the signature recipes of Rajasthan. It is a pure veg recipe.
Rajasthani Kadhi is basically a curry recipe. Traditionally it has 2 versions. One is thick kadhi which is also known as “Khatya” (खाट्या) in rural areas of Rajasthan.
The another version is a thin Kadhi recipe which is especially served with world famous Rajasthani menu Churma Dal Bati and also served with boiled rice, roti, paratha or khichdi.
Ingredients
Ingredients Required for Kadhi Recipe:
- 50 gm Chickpea flour (besan)
- 250 ml Buttermilk (Sour)
- As per taste Salt
- 500 ml Water
Ingredients Required to Temper Kadhi:
- 1 tbsp Oil (or Ghee)
- 1 tbsp Mustard Seeds
- 20 Curry Leaves
- 1 tsp Red chili powder
- 4 Dried Whole Red Chili
- 1 tsp Asafoetida

Rajasthani Kadhi Recipe : Step by Step Instructions
- Mix chickpea flour in buttermilk in a heavy bottom vessel and churn it very well to get a lump free solution.
- Now add water in it and cook it on high flame. Stir it continuously until it starts boiling.
- Once when it starts boiling then leave it to cook on medium flame for 20 minutes and stir it occasionally.
- Meanwhile, add salt as per taste in it.
- After 20 minutes, your Rajasthani Kadhi will cooked. Now the time to tamper it.
- Heat oil (or Ghee) in a pan and add all the ingredients of tampering in it and pour it immediately over Kadhi.
- Serve your sour and spicy Kadhi with churma dal bati, boiled rice, roti, paratha or khichdi.
Recipe Notes
- If you dont have buttermilk, then you can mix water in sour yogurt and then use it.
